Laswa Recipe: How to Cook this Healthy Vegetable Soup

If you are looking for an easy laswa recipe, feel free to follow my version of this famous and healthy vegetable soup. Not an Ilongga, I want to respect traditional recipe yet according to Flavours of Iloilo, there is really no “correct” how to cook laswa – if that’s the best way of saying it.

He further adds, “The recipe varies from household to household and is dictated by what you bought from the market or what’s growing around you.”

My recipe for laswa is from how my helper used to make it to accompany any fried food we have. This recipe is also good for 4 people – based on my family’s consumption.

How to Cook Laswa

Ingredients

– squash

-okra

– sikwa

– string beans

– saluyot

– spices (onion, and tomato)

– Dried shrimp (what I used) or dried fish

Let’s Cook Laswa

1. In a pot, heat 5 cups of water with your spices.

2. When the water starts to simmer, add squash.

3. After 5 minutes or when you feel that the sqquash is soft (but not mushy), add sikwa, okra, string beans, and your dried shrimp/fish.

4. Add salt.

5. When string beans is tender (bright green), add saluyot.

6. Turn off fire right away and serve!

Some tips for you when cooking laswa

1. Saluyot can be too much for those who are not used to eating green vegetables. I used to feel that it gets stuck in my throat and make me gag. Hence, I cut the leaves in half or into 3 (depends on the size). That way, it is easy for me and my kids to slurp this soup along with the healthy saluyot.

2. Always use fresh vegetables. This is the secret especially for laswa. I just added a pinch of salt because how flavorful and fragrant my laswa conconction is.

3. Others add sigarilyas (winged beans) to laswa. I use sikwa because it makes me soup smells more delicious.

4. Never overcook your vegetables. Cook in medium heat.

5. Aside from dried fish/shrimp, you can add crabs and shrimps. I had it in Roxas City.
