Easy Dinuldog Recipe

One of the dishes I’ve been cooking while on quarantine are veggies like laswa and those with coconut milk or gata. After all, it takes time since I don’t use can – I have plenty of time to squeeze the gata.

Also known as ginataang kalabasa with malunggay in Tagalog, we call this dinuldog in Bisaya. I asked my mom for the recipe and just like most homecooks, I rely on my taste memory. For this recipe, I used dried fish. I also tried using dried shrimp.

Ingredients for Dinuldog/ Ginataang Kalabasa with Malunggay

– 1/2 kg kalabasa

– gata. I extract twice, separating the first extract (thick) and the 2nd extract.

– ginger

-lemon grass

– onion

– chili or sili espada( just my version because I little heat)

-dried fish

-salt and pepper to taste

How to Cook Dinuldog

1. Boil squash using coconut milk (2nd extraction). If you are using can or from powder type of coconut milk, just use water.

2. When it starts to simmer, add the spices (onion and chili) and aromatics (lemongrass, ginger).

3. When it starts to get soft, add your dried fish. Then add the coconut milk (first extraction). I also changed into a bigger pot. Oops!

4. Now your kitchen will start smelling good. Just my preference, I mash some of the squash just to give my dish some texture. After all, “dinuldog” means, “mashed” in Bisaya.

5. Season to taste. I used very little since I used dried fish.

6. Add the malunggay/kamuggay and immediately turn off the fire. The heat of the dish will “cook” the malunggay.

7. And you’re done! Serve with piping hot rice! Kalami!
