Sharyn’s Cansi House

One of Pinoy’s guilty pleasures when it comes to food is bulalo. A comfort food of boiled beef shanks and bone marrow with pieces of vegetables. A “cardiac delight” for its notorious cholesterol but hey, a bowl of bulalo can warm our placid stomachs.

And if you are in Bacolod, treat yourself to a serving of Sharyn’s kansi. This humble eatery is located along Narrow Avenue or locally referred as “Shopping” . This place has been awarded as one of the best bulalo in the country.  They have perfected this local dish with serving kansi for decades.

I just learned that kansi is actually the Ilonggo version of bulalo. From an article written by a chef ( he definitely has the authority), the Ilonggo bulalo, that is kansi is different with its distinct sour-based flavor. Imagine combining sinigang ( another Pinoy favorite) and bulalo.

The sour flavor of kansi is brought by a fruit known as “batuan”. I have only seen this fruit when I came in Iloilo for college and have learned to embrace cuisine with batuan like the Ilonggo tinolang isda. If you have noticed in Sharyn’s Kansi, you can’t see any vegetable. Well, the broth has been prepared for hours and the broth is the perfect concoction of all ingredients. The meat is tender that it perfect for my little baby and the soup is rich in flavor that I can’t describe. A foodie like me will just say “ Ka namit guid ah!”

They serve it along with a small mug of extra soup. My husband who acted like a tour guide told me I should drink ( not sip) the soup straight from the mug. Finish your meal of kansi as you slowly drink the soup directly from the mug. Yeah, it warmed my tummy but I felt dizzy afterward. I’m warning you, it is a “cardiac delight”! haha

Bacolod has been known for its chicken inasal and posh restaurants but a trip to the City of Smile means eating a bowl of kansi from Sharyn’s. As a freelance writer, I suggest you start your day with their kansi. I think it is the best way to treat a hang-over or to fuel up for a long day of exploring Sugarlandia.

  1. I’ve yet to go to Iloilo but I have tasted Kansi here in Manila and I like it. Yes, it’s a cross between sinigang and bulalo but there’s a flavor rather distinct to it. I can’t explain it. Unfortunately, my source of Kansi here has closed down (sad) and I am in search of a Manila based establishment serving good Kansi.

    Are you referring to Pat Pat’s Kansi? The distinct flavor is due to the fruit “batwan”. I’m just repeating what I wrote..hehehe. Kansi in Bacolod is better than Iloilo.
